I have a similar camera.  Did you try opening the photo in your Canon software, then click on 'edit', then click on 'color/brightness adjustment', then click on 'RGB adjustment' from the color adjustment drop-down.  This gives you an opportunity to individually adjust the staturation levels of each color. 

I find it's usually easier to adjust the colors on the computor, rather than try to do it with the camera settings.
